When twilight descends upon Marrakech and lanterns flicker along narrow medina corridors, the city transforms into an open-air banquet of captivating aromas. Our curated Night Food Tour is an authentic culinary adventure led by a passionate food historian who knows every backstreet culinary master. We bypass the chaotic tourist stalls of Jemaa el-Fna to explore hidden neighbourhood stalls where locals dine. Our first stop is an ancient communal hammam furnace ('fernatchi'), where clay amphoras filled with spiced lamb ('tanjia marrakchia') are buried in smoldering olive wood ash to slow-cook for eight hours into melt-in-your-mouth tenderness. Along the route, sample velvety harira soup paired with sticky chebakia honey cookies, freshly fried sfenj donuts, spiced lamb and liver skewers sizzling over charcoal, seasoned stuffed msamen flatbreads, and aromatic ginger-cinnamon infusions, concluding on an intimate rooftop with traditional pastries and fresh mint tea.
